Before organizing your knives, you must purge the ones you do not use. I personally only need a paring knife, santoku knife, chef’s knife, and bread knife. I find that most people are fine having just the same. It all depends on how in depth you go into food prep in which case you may need a boning knife, filet knife, cleaver, etc. Some find that they also need a set of steak knives as well.
